Woohoo! It’s almost Summertime, baby! I’m celebrating early by rolling out the red, white and blue salad recipe. To me, Summertime means flavorful fresh salads decked out in color, textures and big taste.
Serving suggestions: While I’ve envisioned this salad showing up to the party as the perfect picnic plate of gourmet goodness, you can reasonably serve it as a full meal at home or as a non-picnic side dish with simple white fish and lime juice.
For the ingredients: Look for a ripe, sweet cherries and blueberries. If you rather keep your salad vegan, skip out on the feta.
Red, White & Blue Salad Recipe
Serving size: Approximately eight
Total Prep time: About 10-15 minutes
- 15 red cherries, washed, pitted and halved (about 1 cup)
- ½ cup of blueberries
- ½ cup of feta crumbles (optional)
- ¼ cup of raw cashews
- 1 head of chopped romaine lettuce (about 2.5- 3 cups)
- ¼ chopped yellow or orange bell pepper for a splash of tasty color
- ¼ cup of celery
Dressing Options
I believe variety is the spice of life. I’m empowering you to choose your own adventure. Choose to create the dressing that best suits your fancy or skip one altogether. (Personally, I like this particular salad naked). 😉 You may store homemade dressings in an airtight glass container. Both these dressings should last a good while or until used them up. I love them as they are healthy and preservative-free!
Basic Oil & Vinegar
½ cup balsamic or apple cider vinegar
1 cup olive oil, extra virgin if you please
sea salt and ground pepper to taste
Sweet Oil Vinaigrette
½ cup balsamic vinegar
1 cup olive oil
1 tablespoon of maple syrup or local raw honey
Whisk all dressing ingredients together and voila!
